If I could pick a meal to eat forever, it would be brunch. It’s that perfect combination of sweet and savory. You can opt for breakfast dishes, or something more like lunch. Essentially the options are endless and they can always be paired with a bloody mary or mimosa…
Therefore brunch is the perfect meal.

The last time I whipped up a croissant French toast, it was savory with gruyere and spinach. Now, it’s time we went sweet!
I opted for fresh blueberries because the blueberries I’ve been picking up from Costco and King Soopers have been HUGE and oh-so flavorful.
The plump blueberries paired with flaky, buttery croissant make for the ideal combination of flavors and textures. Of course, I had to add a little extra sweetness in there with the addition of white chocolate chips (you can opt to skip these if you prefer!
