Overnight Caramelized Onion, Spinach, and Gruyere Croissant Bake
Are you ready to elevate your brunch game?
I have been wanting to make this recipe for SO long.
It’s been one of those ideas sitting in my very long list of ideas that I keep looking at, but never end up testing because I don’t have a crowd to feed.
Well, thanks to my mom retiring and gathering her family together to celebrate her, I had the chance to test out the recipe on a big group of people!
I made two baking dishes worth of this recipe and ended up with just enough to have breakfast for the rest of the week!
Yes, I tend to over estimate how much food people will eat. At least it leaves me with leftovers?
This savory French toast bake is something totally different.
The buttery, flaky croissants are absolutely divine as the bread for the French toast - honestly much better than brioche or challah in my book… Don’t come after me for saying that!
Adding in caramelized onions brings a slight sweetness to the dish, with an incredibly rich flavor that lingers in your mouth after each bite. It’s paired with fresh spinach leaves that wilt perfectly as it bakes and of course, cheese.
Not just any cheese though. Gruyere cheese. Creamy, salty, rich, and nutty, this cheese brings all the flavors together with a savory finish that has everyone going back for seconds.
