whipped ricotta = self-care
Still emotionally recovering from norovirus, but at least I have toast with strawberries and hot honey.
After a full week of being taken down by norovirus, I finally had enough energy to stand upright in the kitchen again. And what did I make to celebrate? These Strawberry & Basil Whipped Ricotta Crostini.
I wasn’t about to go full gourmet (still a little fragile, thank you), but I did want something that felt fresh, summery, and a little celebratory. These hit all the marks: creamy whipped ricotta, juicy strawberries, bright basil, a little hot honey heat, and that balsamic drizzle for a touch of tang.
I may still still have three loads of laundry waiting from Sick Week 2025™, but at least I have something to snack on between flipping and folding.
These little crostini are ideal for patio snacks, brunch spreads, bridal showers, baby showers, birthday parties, or girl dinner. However you do it, just know: if I could make these post-virus, you can definitely whip them up anytime.
