Phew, the last week or so has been a bit of a whirlwind. There’s been so much going on, I can’t even remember what I wanted to talk about when I initially sat down to write this newsletter two minutes ago.
So, instead of harping on things, let’s switch gears. I feel like I’ve been doing that a lot lately, in an effort to be more transparent about my life. Of course, when you are in a bit of a rough patch, it comes out a little on the negative side because that’s the headspace you happen to be in.
I’ve been really working on changing up my routine and I’ll be diving into some hormone testing in the near future, because something just feels off. Ever since I had my son, I can’t seem to get my feet back under me in the way I want to.
I’m functioning and good things are happening, but things don’t feel locked in.
Here’s some happy things that I’m doing and have been loving lately:
Spending more time with friends and family. Making those in my inner circle a priority has been really helpful.
New spice jars - more to come about this on Instagram, but I’m obsessed.
Getting out in the sunshine. Even if it’s just sitting on the patio for a bit.
Going to bed earlier. A MUST.
Doing a multi-week program on Peloton. This has helped me stay on track with my goals more. Working out at home is hard!
One line a day in my 5 year journal. I’m so glad I impulse bought this last week. I love just writing a couple sentences each day! It’s easy to stick to and I know future me will be excited to look back on memories I’ll have long forgotten.
Listening to my favorite albums on vinyl daily. Even if I don’t get through the full album, having music in the background reminds me to get up and take dance breaks.
Talking time for myself and not apologizing for it. I’m trying to stop apologizing at least… call it a work in progress.
Embracing my nerdy hobbies like collecting Harry Potter prop replicas, Legos, puzzles, playing BG3, and trying to read more.

embrace the veggies and fruits
Am I the only one who is suddenly totally obsessed with fruits and veggies again? I feel like I go through a kind of produce hibernation during the winter… But once spring hits, I am all about the produce.
My new favorite habit? Making myself little snacking plates.
I love to graze, so instead of reaching for the over-processed foods that never fill me up (I’m looking at you Goldfish…), I make up a plate of veggies, fruits, and some cheese. Maybe a handful of nuts too. Just something to snack on that is filling, fresh, and simple.
I’ll still eat the Goldfish, don’t worry. But don’t miss out on what’s in season right now!
what to cook this week
Nachos are kinda a thing for me. More like an obsession.
I remember when I first struck out on my own, after quitting a corporate marketing gig. This was a time when nachos were a staple in my diet. I didn’t have a ton of money to burn as I was saving and trying to make this whole food blogger/recipe developer/food photographer thing work.
These carne asada nachos have been on that list for a long time. I LOVE carne asada, but I’ve always wanted to find a way to make it at home that doesn’t give me a headache. I want nachos NOW so I don’t want to wait for a marinade.
This is my shortcut workaround for carne asada that makes a really flavorful meat, ideal for topping chips along with all the other fixings that I personally love to see on nachos.
Every bite is loaded with flavor and the way that I make them really puts the whole pan of goodness over-the-top. I LAYER FOR A REASON PEOPLE.
