I just got back from North Carolina yesterday, so apologies for popping in your inbox a little later than usual today!
This was the first time I’ve been away from my son for so long and I was really surprised by how hard it was! I didn’t realize just how much I missed him (and my husband and dogs, don’t worry I missed them too of course!).
Getting settled in after vacation is always a struggle for me. All I want is for my time off to continue for another couple of days so I can do laundry, go grocery shopping, meal prep, and relax.
This week I am diving right back in and getting back on track with several projects I’ve pushed off for about a month now.
One of the big ones is getting back into a meal prep routine for breakfast and lunch. I function SO much better when I know my next meal is taken care of or planned out.
This week, I’m thinking avocado toast for breakfast (because why not? I came home to lovely pastries from my husband so those will last a couple of days at least.) and a sun dried tomato pasta salad for lunch. I’m a bit obsessed with pasta salads at the moment, so I’m on the hunt for more… If you have one, drop it in the comments please!
