Now, if you know me, you know I am a fall girlie. The only reason I am ok with summer and the insane heat is the fresh produce. Ripe tomatoes, fresh herbs, and most importantly in August… fresh peaches.
The combination of sweet peaches with salty prosciutto and creamy burrata cannot be beat. With a tangy and herbaceous dressing, this salad is the best appetizer, summery side dish, or light lunch to make the most of these last weeks of summer.
