Italy Made Easy #4: Salmon in Lemon Butter Herb Sauce
Lemon, creamy, and light, this lemon cream sauce is good enough to literally drink out of the saucepan.
It’s been a minute since I made a recipe inspired by my time in Italy!
Honestly, the last few months have been hard to keep up with! After making this recipe, I realized why…. I am overcomplicated everything. I kept thinking that I needed to WOW you all with these crazy recipes that you might not be able to find elsewhere.
The truth is, I want you to want to make the food. And I’m guessing that’s what you are looking for too! So, from now on, you’ll see more recipes focusing on three things: seasonal ingredients + easy + bold flavor.
Which is where this salmon recipe comes in!
Wondering where the inspiration for this recipe came from?? Please read the following excerpt from my Fan Club email on September 17, 2007:
“At home I have to because I always have something going on. I am going to work, or going on a date, or going out for the night, or going home to see family, or I have plans with friends, etc. Here, life is less rushed. I take my time. I have leisurely afternoons everyday and am always finding myself stuck with nothing to do during the hours of 1pm and 4pm when everything is closed and there literally is nothing to do anywhere outside of my apartment. So now I am just going to try enjoying my weekends a bit more and leaving the homework for during the week. It’s a change, and feels a lot better than always rushing! I just know it is going to be SO hard when I get back to DU and have a million things going on again… Argh, I almost don’t want to return…
Friday evening Steff, Rachel, Jaime, and I made dinner. I cooked salmon in a lemon herb butter sauce and green beans and mushrooms in a garlic sauce. Then there was bread and butter, white wine, and for dessert… apple tart and caramel cream gelato. It was so good!”
Gosh I miss those siesta afternoons… To have a few hours every day to just… RELAX.
I definitely didn’t understand just how beautiful that time was.
Looking back at these emails, I am always struck by the simplicity of the meals that I cooked. Simple and straightforward enough for an inexperienced college student to make, yet they sound like meals I would order in a restaurant.
