Listen, I know that these phyllo (or filo) brie cigars don’t look like much on the outside. Trust me when I say, this is probably the most frustrating recipe I’ve ever had to shoot.

Normally, I don’t want a little explosion from the center of any of these cigars, but as I look at the photo now, I am really glad a little oozed out so you could at least see it.

Otherwise, they really don’t look like much!

Before I start getting into the actual recipe, let’s talk about why I am sharing it.

It’s been a minute since I pulled out an Italy Made Easy recipe. I haven’t had a ton of time to look back at those Fan Club emails, but I finally did while I was stuck in bed being sick.

I was lucky enough to visit Paris twice while I lived in Rome, and this recipe is from my second trip when I went with a friend and my roommate to visit my friend’s friend (confused yet?), Karen, who was living in Paris. While we were there, Karen invited some friends and there was a little impromptu party happening one night. She planned out this delicious menu (that I noted in detail in my email to family and friends, as one does):
