Do you ever get the overwhelming urge to purge EVERYTHING in your home? When I say everything, I mean everything down to the mass amount of mismatched socks and jewelry you’ve been hanging onto for years but will never wear again?
This urge to purge comes over me once every couple of years. All of a sudden I feel completely overwhelmed with the amount of stuff I have and how much of it I no longer even use. It tends to come on suddenly and somewhat violently (especially if you ask my husband, because to him I’m sure it comes out of nowhere with a massive sense of urgency).
I suppose the urge is partially because I fell into an underconsumption core rabbit hole over the weekend. The more and more I look around our house, the more I am starting to notice all the things we just don’t even touch anymore.
At this point, we’ve been in this house for 1 1/2 years… So I feel like if I haven’t touched it or seen it in that time, it might need to go. I’ve only made it through my small dresser and my jewelry so far, but the project has been started. Let’s hope that I can stick with it until I get to every single room in the house.
This should have been a spring cleaning project, but hey, at least I’m only a season late, right?
Other than getting rid of junk, we had the wake for my aunt over the weekend which was truly wonderful. It’s been years since I’ve had all of my mom’s family in one place, and even though it was a sad occasion that brought us together, it really did fill my cup to see them all. It was just the celebration of life and love that my aunt would have wanted…
Let’s dive into the weekly digest!
what’s new
Here’s what’s new on the blog recently!
Grilled chipotle BBQ chicken skewers - these are on repeat over here lately!
Mexican chicken marinade - if you make the skewers, marinate the chicken with this marinade first! The flavor is SO good with the BBQ.
Summer lemon pasta salad - I gave an old recipe a facelift and it’s better than ever!
inspire
I have been in a bit of a cooking rut lately… Busting out content for the blog has been feeling good, but when it comes to daily meals… I feel like I am banging my head against a wall trying to come up with new ideas that are fun and exciting. Instead, I find myself going back to standby recipes like sausage and peppers, chicken and green beans, etc.
Or we go out. I’ve definitely eaten out more than I planned to in the next week… It’s been an emotional week, so I know I shouldn’t be super hard on myself about it. I do find it hard not to hold myself to a different standard since I am a food blogger and all!
I think I need to hit a farmer’s market this weekend for some seasonal inspiration. What inspires you when you feel like you are in a cooking rut?
what to cook this week
I have been craving tacos lately so these shredded beef tacos are on the menu this week! They are SUPER easy - make them in the slow cooker, Instant Pot, or on the stovetop. I’m planning on doing tacos for dinner the first night, then stuffed sweet potatoes with the leftover meat another night this week. I love a meal that can feed all of us TWICE. Usually I just use the leftovers for lunches, but I’m making about ten million egg bites this week for a client that will be turned into breakfast AND lunches ;)
Until next time!

Meghan
When our kids were little I would periodically look around the house and have the urge to throw everything away. Everything. I mostly restrained myself BUT when we moved into the RV I actually got to get rid of almost everything and it felt GREAT.
