easy mini almond croissants
Perfect for lazy mornings when you want pastry, but you don't want to leave the house.
If you didn’t know already, I’m a pastry girly…
My love language is always pastry. Savory, sweet, breakfast, dessert, or snack time, if you bring me pastry, you shall forever be cherished in my heart.
This is the only downside of the location of our home. While I love so many things about it, the downside is there is no good pastry shop nearby. No flaky croissants, no pain au chocolat, just nothing.
Of course, I will make the trip for pastry most days. On the days that I’m exhausted, it’s just not in the cards and those tend to be the days that I crave pastry THE MOST.
So until a pastry shop opens its doors close by, I needed to figure out a solution at home and that’s where these tasty little mini almond croissants come into the picture.
And really, who can resist a warm croissant fresh out of the oven? Flaky and buttery, filled with frangipane, and perfect for pairing with coffee… It’s one of my favorite “pastry hacks” that I’ve come across.
The almond frangipane filling is light and sweet, without be cloyingly sweet. It’s just the right almond flavor to pair with the buttery pastry! The first bite will transport you to a quaint little cafe in Paris, without the cost of a plane ticket ;)
