I’ve been trying to get back into weeknight dinners that are a little more creative lately. We’ve been in a bit of a rut when it comes to dinner, defaulting to old standbys, whatever is in the freezer that we haven’t gotten to, or ordering out.
Something about the transition to full-time daycare and getting back into full-time work hours has me totally beat by the end of every day. So, 30 minute meals are the focus at the moment.
I had the idea to make this skillet after we made our favorite tortellini soup. I wanted something fall-inspired with pumpkin, but savory, meaty, and cheesy all in one.
Essentially comfort food in one pan, with a bit of greens to make me feel like I’m eating a more balanced meal.
Enter this 30 minute pumpkin sausage tortellini skillet!
It’s such an easy recipe. You cook everything in the same pan, it is done in 30 minutes from start to finish, and the leftovers taste delicious the next day.
